Ingredients

4 bone-in, skin-on chicken thighs
1 cup all-purpose flour
2 tablespoons cornstarch
2 tablespoons Fresh Life Cajun Spice Mix
1 teaspoon salt
1/2 teaspoon Fresh Life Ground Black Pepper
1 cup buttermilk
Frying oil
Step 1: Prep the Chicken
Start by patting the chicken thighs dry with paper towels to remove any excess moisture. This will ensure the skin becomes perfectly crispy when fried.
Step 2: Create the Cajun Flour Coating
In a shallow dish, combine the all-purpose flour, cornstarch, Fresh Life's Cajun Spice Mix, salt and Fresh Life Ground Black Pepper. Mix the dry ingredients until well combined, creating the perfect coating for your chicken.
Step 3: Dip the Chicken in Buttermilk
Pour the buttermilk into a separate shallow dish. Dip each chicken thigh into the buttermilk, ensuring it's evenly coated on both sides. The buttermilk will not only add flavor but also help the flour mixture adhere to the chicken.
Step 4: Coat the Chicken with Cajun Flour Mix
One by one, transfer the buttermilk-coated chicken thighs to the Cajun flour mixture. Ensure each thigh is fully coated, pressing the flour mixture into the chicken for an extra crispy crust.
Step 5: Fry the Chicken
Put oil in a frying pan, heat the oil over medium-high heat until it reaches 175ºC (you can check the oil's readiness by dropping a small amount of crumbs from the Cajun Flour Mix into the oil, if it sizzles, it's ready for frying).
Gently place the coated chicken thighs into the hot oil (be careful not to overcrowd the pan). Fry the chicken for approximately 5-6 minutes per side or until the skin is crispy and golden brown, and the internal temperature reaches 74ºC.
Step 6: Drain and Serve
Once the Cajun Fried chicken is perfectly cooked, remove it from the oil and set it aside on a wire rack or paper towel to drain any excess oil. Let it rest for a few minutes before serving to retain its juiciness.
