This vibrant roasted vegetable recipe brings out the natural sweetness of the veggies while infusing them with the savory and fragrant flavors of Fresh Life's Aromatic Herb Seasoning. Perfect as a side dish or a light meal!

Ingredients
3 cups mixed vegetables (e.g., carrots, zucchini, bell peppers, potatoes, etc), chopped
2 tablespoons Fresh Life Aromatic Herb Seasoning
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Preheat Oven
Preheat your oven to 200ºC (400ºF). You can also use a pan as an alternative.
Prepare Vegetables
In a large bowl, toss the chopped vegetables with olive oil and Fresh Life Aromatic Herb Seasoning. Ensure all the veggies are evenly coated.
Roast
Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden brown.
Serve
Remove from the oven and season with additional salt and pepper if needed. Serve hot as a side dish or on top of a grain bowl for a wholesome meal.
As an alternative, you can utilize a regular cooking pan and use unsalted butter mixed with Fresh Life Aromatic Herb Seasoning to sauteé your vegetables.
